Change your Life Syrup!

Truly, who knew? At the time I was intro­duced to this syrup, my reper­toire for pan­cakes and waf­fles included fake maple syrup, and jam. I was a syrup noob. Now, I serve the fake maple for the kids, with their lack of appre­ci­a­tion and ten­dency to drown their goods, and save the good stuff for the grown ups. And this syrup is so, so good! You really don’t even need to but­ter your waf­fle or pan­cake! Make sure your sauce pan is on the large side to accom­mo­date the reac­tion when you add the bak­ing soda at the end. It foams like crazy! Also, use unsalted but­ter so you can con­trol the salti­ness. Some but­ter has more than oth­ers. Then add a pinch at the end to taste, to bal­ance out the sweet. Serve it warm, prefer­ably before the foam sub­sides. It’s going to change your life. It did mine!

Change your Life syrup!


  • 1 cup sugar
  • 1/2 cup buttermilk
  • 1 stick unsalted butter
  • 1/2 tsp bak­ing soda
  • 1 tsp vanilla


  1. In a medium-large sauce pan, bring the sugar, but­ter­milk, and but­ter to a boil.
  2. Remove from the heat and add the bak­ing soda and vanilla.
  3. Whisk together well. The syrup will bub­ble and foam up vigorously.
  4. Serve the syrup warm. I always dou­ble the batch and store the left­over in a jar in the fridge.

  2. So im mak­ing break­fast for work tomor­row and i was just won­der­ing, can i make this syrup tonight so i dont have to rush in the morn­ing? or will it turn into hard caramel in the refrig­er­a­tor overnight?

    • You can make it ahead of time. It will solid­ify some­what in the refrig­er­a­tor, but it warms back up just great!
